Buffalo Chicken Banza

  • 1 box Banza elbows
  • ½ tablespoons butter
  • 1 cup diced celery
  • ¼ cup diced red onion
  • 1 garlic clove, minced
  • 3 green onions, sliced
  • 2 tablespoons buffalo sauce
  • 3 ounces light cream cheese, softened
  • 5 ounces plain Greek yogurt
  • ¼ cup milk
  • ¼ teaspoon salt
  • ½ cup 2% milk
  • Shredded cheddar cheese
  • ½ cup crumbled blue cheese
  1. Cook pasta according to package directions.
  2. In a medium saut̩ pan, heat butter over a medium heat until melted. Add in celery, red onion, garlic and 2 green onions. Saut̩ until softened and fragrant, about 5 minutes.
  3. Turn the heat down to low and add in buffalo sauce, cream cheese, Greek yogurt, milk, and salt. Stir until cream cheese has melted.
  4. Add in cooked pasta and cheese, toss until combine and cheese is melted.
  5. Transfer to serving dish and garnish with green onion and blue cheese.
