Greek Garlic Olive Oil Rice Bowl

Ingredients

  • 1 bag Banza Garlic Olive Oil Rice
  • 1 cucumber
  • 1 pint cherry tomatoes
  • 1 medium red onion
  • 1/2 cup feta cheese, crumbled
  • Vinegar, any kind
  • Peppercorns (optional)
  • Fresh mint, to garnish

Instructions

  1. Quick-pickle the onion: Thinly slice the onion. Add the sliced onion to a sealable jar. Fill the jar halfway with water and the remaining with vinegar. Add salt, and peppercorns if desired. Seal jar, shake up, and set aside.
  2. Dice the cucumber, cherry tomatoes, and fresh mint leaves.
  3. Cook Banza Garlic Olive Oil Rice according to package instructions, remembering to remove flavor packet from rice pouch before cooking. After rice is finished cooking, strain, rinse, return to the pot, and mix in the flavor packet. 
  4. Build your bowl: Add desired amount of cooked rice into a bowl. Then, add in the tomatoes, cucumber, feta crumbles, and pickled onion slices. Sprinkle fresh mint leaves on top if desired, and mix together thoroughly. Enjoy!
