Kale Pesto & 'Just in Thyme' Tonic
Kale Pesto & 'Just in Thyme' Tonic
  • Pesto
  • 1 clove garlic
  • 4 tbsp pumpkin seeds
  • 12 cup kale
  • 3 tbsp cilantro
  • 1 tbsp chives
  • 5 tbsp basil
  • 12 cup Parmesan cheese
  • 12 tsp salt
  • Zest of 2 lemons
  • 1/4 cup lemon juice
  • 34 cup olive oil
  • Simple Syrup
  • equal parts water and sugar
  • a handful of sprigs of thyme
  • For the Cocktail
  • 2oz Off Beet Misfit Juice
  • 2oz gin
  • 1oz thyme simple syrup
  • juice of half a small lemon
  • club soda
  • ice
For the Pesto
  1. Combine 14 cup parmesan, garlic and pumpkin seeds in a food processor and puree.
  2. Add the kale, cilantro, chives, basil, and remaining 14 cup of cheese and process.
  3. Add the salt, lemon zest and lemon juice.
  4. Drizzle the olive oil into the food processor while running to make a smooth pesto.
For the Cocktail
  1. To make simple syrup: Mix the water, sugar and thyme in a saucepan on medium heat until sugar dissolves. Let simmer until the liquid is no longer cloudy. Remove from heat and set aside to cool.
  2. Place 2-3 ice cubes, gin, Off Beet juice, simple syrup and lemon into a shaker. Shake well. Strain into a lowball glass over ice.
  3. Top off with club soda and a sprig of thyme for decor.
