Part of the traditional Hawaiian Plate Lunch, the Mac Salad acts as a creamy counterpoint to savory, salty main dishes! This version is made with vegan mayonnaise. Cook Time: 7 MINUTES Serves: 4-8 PEOPLE INGREDIENTS: 6 Ingredients 1 Box Banza Elbows 2 tablespoons grated onion (about 1/4 of a medium onion) 1 cup grated carrots 1/2 cup baby spinach cut into thin strips 1 cup vegan mayonnaise 2 tablespoons pickle juice Salt and pepper for seasoning Directions Cook Pasta: Follow the box directions, strain, rinse with water, and put into a large mixing bowl. Mix Ingredients: In the same large bowl, add the remaining ingredients. Season: Season with a pinch of salt and pepper and adjust according to taste. Chill: Leave covered in the refrigerator for at least an hour to develop more flavor. Ideally leave overnight before serving!

Pizza Primaveral Con Espárragos Y Hierbas
Cook Time: 30 MINUTES Serves: 2 PEOPLE INGREDIENTS: 9 Ingredients 1 Banza pizza crust Small bunch of asparagus (about 6-10 stalks) 1 shallot, peeled and thinly sliced 2 cloves garlic, grated or finely chopped ½ cup white cheddar, shredded ½ cup fontina or mozzarella, shredded ⅓ cup Parmesan, grated A few chives, thinly sliced Small handful of fresh basil, roughly chopped Directions Prepare Ingredients: Preheat oven to 400° F. Cut any thick asparagus spears in half lengthwise, then cut all asparagus in half crosswise. Roast Vegetables: Line a baking sheet with parchment paper or foil for an easy clean up. Place asparagus and shallots on prepared baking sheet. Drizzle with 1 tbsp olive oil and season with a pinch of salt. Bake for 7-9 minutes, or until they begin to soften. Remove from oven and let cool. Top Pizza: While vegetables bake, spread garlic evenly over crust. Top with white cheddar and fontina. Layer asparagus and shallots over top, then finish with a dusting of Parmesan. Season with salt and pepper to taste. Bake Pizza: Bake until cheese is melted and crust is light golden, 12-16 minutes. Garnish with chives, basil and a drizzle of olive oil. Enjoy! NotesA hot honey drizzle post bake will take this za up a notch! Shallot can be replaced with red onion if needed.

Ingredients 1 Banza Plain Crust Pizza 1 pack of mushrooms, chopped 1/2 white onion Drizzle of honey 1/2 cup goat cheese 1 pack of figs, thinly sliced 1/2 cup baby arugulaa Drizzle of balsamic vinegar Directions Prepare Toppings: Pre-Heat over to 400˚F. Sauté the onions in 2 tbsps of olive oil over medium heat until transparent and beginning to brown. Remove from pan, add butter and mushrooms, and sauté until golden brown and beginning to crisp. In a bowl, use a fork to whip up the goat cheese with a drizzle of honey and water to thin it out. Make Pizza: Layer on a generous amount of the goat cheese spread to the Banza plain crust pizza. Top with onions, mushrooms, and sliced figs. Bake: Pop the pizza into the oven, directly on the middle oven rack. Bake for 10 - 15 minutes, until crust is golden brown. Finish: Carefully use tongs to remove the pizza from the oven to a cutting board. Top with a drizzle of balsamic and the arugula

Remove from oven and reserve in a bowl. Add in buffalo sauce and toss to coat. Assemble your pizza: Spread buffalo sauce evenly onto the crust, top with the roasted cauliflower and mozzarella cheese. Bake: Keep your oven at 400˚ and carefully slide the pizza into the oven, directly on the rack. Bake for 10 - 15 minutes, until cheese is bubbling and the crust is golden-brown. Remove from oven and garnish with ranch dressing and green onion.
