Extra Cheesy Classic Lasagna
GOOD FOR: Using up leftover vegetables in the fridge, getting kids to eat more veggies.
- 1 box Banza Lasagna
- 3 cups marinara sauce
- 16 oz ricotta cheese
- 1/2 cup grated parmesan
- 1/4 cup chopped basil
- 1 1/2 lb sliced mozzarella (fresh)
- Pre-heat oven to 375°F. In a small bowl, combine ricotta, 1/4 cup of parmesan, and chopped basil. Season with salt & pepper.
- Spread 1/2 cup of marinara sauce in a 9 x 13 in. baking dish. Add 4 dry Banza Lasagna noodles over the sauce, leaving space between each sheet as they will expand while cooking. Add a layer of ricotta, a layer of mozzarella, and top with noodle. Repeat twice more (sauce, noodle, ricotta, mozzarella, noodle), topping last layer with the remaining mozzarella and parmesan.
- Cover and bake for 45 mins. If desired, remove the foil after 40 mins. and broil for 5 more mins. to allow top cheese to brown.
TIP: To add vegetables to this recipe; simply chop them very small and saut̩ in 2 tbsp olive oil and season with salt. Cook until softened but remove from heat before any browning occurs. Strain any liquid, and then add between layers of ricotta and mozzarella.
